These coconuts are sourced from Sri Lanka and the Philippines under the New Zealand EcoSocial ethical and socially responsible sourcing certification. There are absolutely no artificial ingredients, preservatives, or chemical sprays used on these coconuts or in the manufacturing process.

  • Brazil nuts taste rich and creamy, and their meat is similar in texture to coconut. To fully appreciate them, it's important to know where they come from. The brazil nut tree is gigantic, reaching a height of 30-45 metres or more, and grows very slowly - it takes 10-30 years before producing nuts. However, it can also live a long life of up to 800 years. The tree requires a specific species of bee to pollinate its flowers which produce the fruit, and a small ground mammal called the agouti to break open the pods and spread the seeds. For these reasons, the Amazon is the only place brazil nuts have been grown successfully and why they are so precious. Older brazil nut trees can produce around 300 or more fruit annually. When the fruit is ripe, it falls from the tree with a loud crashing sound, and inside each fruit pod are 12 to 25 delectable brazil nuts.

  • Referred to as “baby quinoa” due to its size and appearance, canihua (pronounced ka-ni-wah) is the ‘new’ ancient super grain from the Andes. Canihua thrives in high-altitudes and has an equally impressive nutrition profile. It is an excellent source of protein and rich in amino acids such as tryptophan, isoleucine and lysine - vital for tissue growth and development. It also scores exceptionally high in levels of iron, magnesium and calcium.

    Naturally gluten-free with low GI, canihua is one of the least allergenic food around. Unlike quinoa, however, canihua is saponin free. Saponin is the coating that gives quinoa a soapy, slightly bitter flavour—if not rinsed properly. This makes canihua easier to prepare. With its small size and mild, nutty flavour, canihua is great served as porridge or added to salads, stir-fries, soups and stews.

  • Ceres Organics Coconut Sugar is a naturally low-GI cane sugar alternative produced from tropical coconut palm blossoms. Paired with its rich, lovely flavour, it is packed full of health benefits. Coconut Sugar is an unrefined, unfiltered, unbleached, preservative-free wholefood that is rich in magnesium, zinc, iron and potassium. Sustainably harvested using traditional methods, it remains in a raw unheated state preserving its rich mineral profile.

    Coconut palms produce an average of 50-75% more sugar per acre than sugar cane, and use less than 1/5th of the nutrients for that production, leading to Coconut Sugar's reputation as the most sustainable sweetener in the world. 

    Coconut Sugar is low on the Glycemic Index with a GI rating of 35, which is beneficial for weight management and people with diabetes. In comparison, most commercial honeys are GI 55+ and cane sugars are GI 68. Low GI allows for a slow release of energy, efficiently fueling your day-to-day activities and avoiding the highs and lows associated with most commercial sugars. Many people with an intolerance for Fructose have also found Coconut Sugar to be beneficial since it is primarily Sucrose based.

  • Coconut sugar is slightly less sweet than cane sugar, but it has a delicious caramel-like flavour. To substitute in place of cane sugar, we recommend using 25% more coconut sugar (e.g. 1 cup of cane sugar = 1.25 cups of coconut sugar).

    It's super yummy in cakes, baking, fruit crumbles and savoury cooking and makes a healthy replacement in tea, coffee and other hot drinks.

  • Buckwheat is actually a seed of a flowering fruit that is related to rhubarb and sorrel. Ground into flour, it has a strong and earth flavour. It's completely gluten-free and unrelated to wheat and all the grass roots in the wheat family making it a perfect substitute for anyone who is gluten intolerant. It is one of the healthiest, nuttiest and most versatile whole grains which is incredibly high in nutrients, and even has more fibre than oatmeal. 

    Buckwheat flour is used in Eastern Europe to make blinis, US to make crepes and pancakes and in Asia to make Japanese soba noodles. With a slightly heavier texture, it makes a great base for wheat free bread and pasta.
