  • Step over quinoa! There's a new gluten-free grain on the block. If you're sick of rice, or trying to eliminate dense wheat-based pantry staples, sorghum is a fantastic grain to try.

Known as a super-crop in its native Northeastern Africa, sorghum is a highly resilient plant whose cultivation is being encouraged for its drought and heat tolerant capabilities. It also provides high levels of protein, as well as being rich in key minerals and vitamins, such as iron and B vitamins.

With its delightfully chewy texture, mild nutty flavour and vast array of nutritional benefits, sorghum is a fantastic addition to any meal. A favourite use of it is as a nutritious alternative to Israeli couscous, as it maintains all the benefits of a wholefood.

Please note that, while this is similar visually to Israeli couscous, this will cook very differently as it is a whole grain and not a type of pasta, so while you would expect a soft texture from couscous, sorghum is to be expected to be a bit firmer.
  • Sorghum can be used as an alternative for rice, couscous, or pasta, and can be used in soups, stews and casseroles.

Simply follow the instructions on the packet to cook. You can also find more advice about cooking sorghum here: Moroccan Sorghum Salad.
